Description

A refreshing and guilt-free dessert that highlights the zesty flavor of lemons without any added sugar.


Ingredients

  • 1 pre-made pie crust
  • 1 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 large eggs
  • 1/2 cup sugar substitute
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1/3 cup unsweetened almond milk
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the lemon juice, lemon zest, eggs, sugar substitute, cornstarch, and salt until smooth.
  3. In a saucepan, bring the almond milk to a simmer.
  4. Add the lemon mixture to the saucepan, continuously stirring until thickened.
  5. Pour the filling into the pre-made pie crust.
  6. Bake for 25-30 minutes or until set.
  7. Let cool before refrigerating for at least 2 hours.
