Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the lemon juice, lemon zest, eggs, sugar substitute, cornstarch, and salt until smooth.
- In a saucepan, bring the almond milk to a simmer.
- Add the lemon mixture to the saucepan, continuously stirring until thickened.
- Pour the filling into the pre-made pie crust.
- Bake for 25-30 minutes or until set.
- Let cool before refrigerating for at least 2 hours.
