- 2 tbsp cornstarch

Instructions
- In a saucepan, combine tart cherry juice, fresh lemon juice, erythritol, lemon zest, and salt.
- In a small bowl, mix cornstarch with water until smooth.
- Add cornstarch mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
- Pour the mixture into a greased baking dish and let it cool completely.
- Once cooled, cut into squares and enjoy.
