- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup erythritol or preferred sweetener
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the almond flour, coconut flour, baking powder, salt, and sweetener.
- Add in the melted butter, egg, and vanilla extract. Stir until combined.
- Using a spoon, drop small amounts of dough onto the prepared baking sheet.
- Bake for 10-12 minutes or until golden and crisp.
- Allow to cool completely before serving.
Notes
- Store in an airtight container to keep them crisp.
- These can be used as a base for other desserts like banana pudding or as a snack on their own.
