Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup erythritol or preferred sweetener
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the almond flour, coconut flour, baking powder, salt, and sweetener.
  3. Add in the melted butter, egg, and vanilla extract. Stir until combined.
  4. Using a spoon, drop small amounts of dough onto the prepared baking sheet.
