- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/2 teaspoon red pepper flakes
- Salt to taste
- Black pepper to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add the shrimp and season with salt and black pepper. Cook until pink, about 2-3 minutes per side. Remove from skillet and set aside.
- In the same skillet, melt the butter and add garlic; sauté for about 1 minute until fragrant.
- Add cherry tomatoes and red pepper flakes; cook until tomatoes are softened.
- Stir in spinach and cook until wilted.
- Return the shrimp to the skillet and toss everything together; cook for an additional 1-2 minutes.
- Garnish with fresh parsley before serving.
Notes
- For a spicier dish, add more red pepper flakes.
- Serve with pasta or over rice for a complete meal.
