Description

This Vegan Cashew Boursin Cheese is a creamy, flavorful spread made with soaked cashews and spiced to perfection.


Ingredients

Scale
  • 1 cup raw cashews, soaked
  • 2 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon black pepper


Instructions

  1. Drain and rinse the soaked cashews.
  2. Add the cashews, nutritional yeast, lemon juice, garlic, onion powder, and salt to a food processor.
  3. Blend until smooth and creamy.
  4. Scrape down the sides and blend again if necessary.
  5. Mix in the fresh herbs and black pepper with a spatula.
  6. Taste and adjust seasonings as desired.
  7. Transfer to a container and chill in the refrigerator for at least 2 hours before serving.
