Description
A delicious and healthy dish, the Zucchini Roll-Ups Recipe is keto-friendly and packed with flavor, making it a great appetizer or light main course.
Ingredients
Scale
- 2 medium zucchinis
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce (sugar-free)
- Fresh basil leaves for garnish (optional)
Instructions
- Wash the zucchinis and slice them lengthwise into thin strips (about 1/8-inch thick). Sprinkle with salt and let sit for 10 minutes, then pat dry.
- In a mixing bowl, combine ricotta cheese, half of the mozzarella, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Spread a thin layer of marinara sauce on the bottom of a baking dish. Take a zucchini strip, place a spoonful of the cheese mixture at one end, and roll it up tightly. Place seam-side down in the baking dish. Repeat with remaining strips and filling.
- Pour remaining marinara sauce over the roll-ups and sprinkle with the rest of the mozzarella cheese. Cover with foil and bake at 375°F for 25 minutes, then uncover and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before serving. Garnish with fresh basil if desired.
Notes
- Thickness of zucchini slices is crucial; aim for about 1/8-inch.
- Salting the zucchini helps draw out moisture to prevent sogginess.
- Adjust seasonings in the cheese filling to your taste.
- Keep an eye on baking time to avoid overcooking.
