  • 1 cup marinara sauce (sugar-free)

Instructions

  1. Wash the zucchinis and slice them lengthwise into thin strips (about 1/8-inch thick). Sprinkle with salt and let sit for 10 minutes, then pat dry.
  2. In a mixing bowl, combine ricotta cheese, half of the mozzarella, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Spread a thin layer of marinara sauce on the bottom of a baking dish. Take a zucchini strip, place a spoonful of the cheese mixture at one end, and roll it up tightly. Place seam-side down in the baking dish. Repeat with remaining strips and filling.
  4. Pour remaining marinara sauce over the roll-ups and sprinkle with the rest of the mozzarella cheese. Cover with foil and bake at 375°F for 25 minutes, then uncover and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  5. Let cool for a few minutes before serving. Garnish with fresh basil if desired.
